Baked Fish and Broccoli - A Fast and Simple Vegetable Dish

For today’s Meal Monday recipe, we’re sharing another meal that will make your life easier. Our Baked Fish and Broccoli is fast, easy, tasty, and healthy. It just ticks all the boxes of what makes a good dinner meal. The fish will cover our daily protein intake, and broccoli is full of nutrients, fibers, and vitamins that promote heart health and lower cholesterol.


Let’s start!


You’ll need:


Tilapia fillet

Mayonnaise

Parmesan cheese

Garlic powder

Pepper

Lawry’s seasoning salt

Chili powder

Broccoli

Olive oil


Let’s begin by preheating the oven before we prepare anything.


Place a layer of parchment paper on a baking tray, and place the fish on top of it. Make sure they are thawed and patted dry so we can make them as crispy as possible. We don’t want our fish to turn soggy, especially because we are not using flour in this recipe.


In a small bowl, let’s combine about a spoonful of rich mayonnaise and all of our seasonings. Put in some parmesan cheese, garlic powder, pepper, Lawry’s seasoning salt (which has some salt, paprika, and lemon pepper in it), and chili powder (as much as you like). Mix thoroughly until it forms a paste.


Apply the “paste” and spread it on the fish using a spoon. This paste will make our fish so tasty and crispy. When every bit of fish is covered, bake it for about 12 minutes in an oven.


Take out another layer of parchment paper and put it on a tray. Put half a bag of broccoli on the tray, and drizzle some olive oil on them. Use your hands to make sure every vegetable is covered in oil - this will make the broccolis crispy. You can also add in whatever vegetable you want. Add in some garlic powder, pepper, and Lawry’s seasoning salt on them. Mix it all up to make sure the vegetables will be seasoned and be able to absorb all that goodness. Make sure the broccolis are scattered so they can cook evenly, and avoid excessive browning. We want them crispy and cooked just right!


Pop these in the oven, and there you have it! A lovely dinner meal for our families. You can serve it with salad, pasta, or even some cooked rice. Don’t be fooled by how quickly we made this meal because it is oh-so-good!
