Amazing Beef And Bean Burritos Out of Leftovers!



Hey there, busy mom!


For today’s Meal Monday, we are sharing with you a throwback to our delicious beef and bean burritos recipe. What’s so amazing about it, you ask? It’s yummy, savory, and made out of ingredients you have right out of your fridge - leftover roast! This famous Mexican food is made even better because we are using previous meals efficiently and transforming them into something better. Here at Mom Training, we are all about quick, yummy, healthy, and no-waste meals! We love efficiency!


If you have some leftover roasted beef (or any protein), and some of the necessary ingredients at home, then join us in making this recipe. Burritos are always a great idea! We’ll make it with lots of seasoning so this one is going to be jam-packed with flavor.


You’ll need:


Butter

Pan

Diced tomatoes with green chilies

Onions

Leftover roasted beef

Leftover roasted potatoes

Mushrooms

Oil

Pinto beans

Kidney beans

Seasoning salt

Garlic powder

Black pepper

Chili powder

Cumin

Tortillas


Let’s start!


First, chop the onions and mushrooms into dices. You can also chop the leftover beef and potatoes, or shred them with a fork. This depends on which process you find easier. Once you’re done chopping the ingredients, we can start cooking!


Heat a medium-sized pan on the stove. Once the pan is a little warm, put in the butter. Let it melt.


Add in the chopped onions and start sauteing. Once the onions are cooked, add in your chopped mushrooms. Just keep sauteing over low to medium heat until everything looks good.


By the time the mushrooms are cooked, add the leftover beef and potatoes to the pan. Keep sauteing. At this point, feel free to add in a bit of oil if the ingredients start sticking to the bottom of the pan. Pour in the can of diced tomatoes in this process, and just keep stirring. Add some water once again if the consistency is too thick. Don’t worry about it because we will let it boil a little and add in some other ingredients.


Start adding the pinto and kidney beans into the pan. Keep stirring until you get the right consistency.


Now - the fun part! Let’s add in some seasonings! This will really liven up the taste of the burritos. Let’s add a good dash of seasoning salt, garlic powder, black pepper, chili powder, and cumin.


And we’re done! Take it off the heat, and serve with some warm, toasted tortillas. This is such a great snack to have while chilling at home, and we’re sure you and your kids will enjoy this.
