Savory Turkey Sausage Tomato Veggie Soup




Hey busy mom!


Soup is the ultimate comfort food. It’s perfect for days and even nights when we just want to relax, and more than enough to comfort us on days when we or our little ones are feeling a bit under the weather. Today’s Meal Monday throwback recipe is something we’ve made for the previous Spring, but we just want to share it with you because it’s so comforting and yummy, you will surely feel better after a bowl. This recipe has everything - sausages, beans, veggies, and lots of flavor.


So what happens when we eat a lot of tomatoes?


Tomato is known as a primary source of lycopene, which is an antioxidant that reduces the risk of heart attack and cancer. It’s packed with vitamin C which is good for our immune system, vitamin A for good skin and good vision, and it does wonders to our heart health. As for the beauty benefit - it keeps the skin firm which promotes youthfulness. The amazing thing about tomatoes is they taste good and can be added to just about anything - soups, salads, sauces, sandwiches, side dishes, and even morning omelettes.


You’ll need:


Turkey sausages

Beans (We used pinto beans, kidney beans, great northern beans, and blackbeans. Choose your favorites!)

Zucchini

Onions

Garlic

Seasoning

Olive oil


Let’s get to it!


Using a saucepan or a pot, let’s saute our turkey sausages, chopped garlic, and chopped onions. Don’t worry about using a pot, we’re going to fill it with soup later so using a pot instead of a frying pan will actually save you from having to wash a lot of pots and pans afterwards. Cook everything with a bit of olive oil. You can chop up the ingredients beforehand, or you can do it straight in the pot as you cook it if you have the right kitchen utensil (we’re using the Mix N Chop tool). Just be careful to avoid making a lot of mess.


Start putting sliced zucchinis into the pot once the meat is done. Stir everything for a minute, then add all those colorful, delicious beans. The beans have starch in them so it will help with the consistency of the soup. It will also add to the savory flavor we’re going for and it acts as a great extender too, so we won’t have to use a lot of sausages in this recipe.


Cook everything for a while, then add 2 boxes of the Red Pepper & Tomato Soup mix by Pacific Foods. We bought it from Costco. Stir, and add a bit of water according to the consistency of the soup that you want.


Let’s make this soup super delicious! Add a heaping tablespoon of chili powder, 2 tablespoons of dried parsley, and 1 teaspoon of salt. You can modify this according to your taste, especially if you’re going to cook for the kids.


Cover the pot and let it simmer gently over low to medium heat to let the ingredients soak and let the flavors really blend together beautifully. The longer you leave it to simmer, the more flavorful it will be, just watch out so that those zucchini bits won’t turn into mush.


And voila! Our soup is done! Yes, it’s that fast and easy. We recommend serving it into a nice bowl with slices of warm bread. You can also toast the bread rolls a little bit with a bit of butter to make it even more delicious and enjoyable. Who said that comfort food has to cost you lots of time in the kitchen?
